My least- absolute LEAST- favorite part about cooking is the cleanup. I seriously loathe putting away dishes, or scrubbing, or even trying to play Tetris with our dishwasher. Yes… we have a dishwasher. I know, I shouldn’t complain… but I do anyway.

I also have similar feelings towards doing the laundry, in case you’re interested. Perhaps that’s for another post.

Because I hate doing dishes so much, in my mind, there is nothing better than a one-pot dinner. And this one is one of the easiest and most flavorful I’ve come up with- a real bang for your buck meal. Continue reading

Wow… where did the last month go? It’s already April, and here I am just about ready to stow away my down jacket and winter boots for good until next season. I for one cannot wait to kick winter out the door- in fact, I’m getting summer started early with a trip to Florida next week to visit my grandmother.

I hope to be able to make some noms there too, when I’m not too busy making life’s tough decisions, like whether to hit up either the beach or the pool. Or maybe get a massage instead? Pass me a margarita, please! Continue reading

Sometimes, a girl’s gotta get her vegetables on.  Maybe you’ve overindulged in too much crack pie, or pudding, or even too many pancakes. Not that I’ve ever done one all of these things. And with St Patrick’s Day coming up, this not only is bright and green, but it also serves as a great detox-er for those who … um… love this holiday a little too much!

This recipe comes from Alton Brown, one of my favorite chefs on Food Network. I really love the addition of toasted panko here- adds a real nice crunch to this side dish. Continue reading
