Lemon Lentil Soup

It’s probably hard to sell lentil soup as sexy, but I’d say this lemony version comes very close. Lemon brightens up this soup in a way that makes it both comforting and vibrant- which is perfect when we’re in the throes of winter but are pumped for a whole upcoming new year of amazing things just waiting to happen.

Granted, I’m one of those people who could eat soup when its 85°F outside, but there’s something about sippin’ on some homemade soup in the dead of winter that just feels great, don’t you think? Lemony Roasted Chicken

It’s freakin’ COLD here in New York/New Jersey lately, and I’m looking for every excuse I can get to turn on our oven and crank up the heat. Comfort food is the name of the game around here- This week alone we’ve made lentil soup, mac ‘n cheese, homemade pizza, and this here beautiful lemony roast chicken.

Think tender, perfectly moist chicken, scented with lemon from the inside out, with a crisp, crackling skin. This chicken takes about 15 minutes of prep work and is perfect to make on a weekend with plenty of leftovers to last you into the week.

Beef Empanadas This is a recipe I have been dying to share with you guys for years. My grandmother has been making these traditional Argentine beef empanadas for as long as I can remember (and at least as long as my dad can remember), and they are to die for. My grandmother is well-known for a lot of things- her dancing (let’s say she was very popular at my wedding), her hard work and determination (she moved to this country as a single lady with a 6 year old and no English, and ended up kicking ass at life), and her empanadas are just one of the many amazing recipes she makes for our family every year.
