Hi everybody! I am finally back from an adventure- I just got home yesterday from my first-ever trip to California, San Francisco specifically. It was so much fun to go on a real, non-work- or family-related vacation- especially before Autumn sets in and we’re all out of sun here in the Northeast!

Now, I have no idea what it is about vacation that makes me feel it’s acceptable to constantly stuff my face with food every 10 minutes, but I do believe I’ve suffered irreparable stomach expansion and a serious case of the need-new-pants-because-none-of-mine-fit-now-itis. [Read more…]

Simply Healthy Gazpacho

Yeah, I know- Summer is sadly winding down. That doesn’t mean you can’t savor the last little bit of it, as we head into fall! This super fresh, ridiculously easy gazpacho is a great way to say farewell to the heat, and welcome autumn in a healthy, delicious way.

I am really excited to share this recipe with you today. It’s always so great to reconnect with old friends, especially when you learn something new from them. One of my neighbors and schoolmates growing up, Rebecca Meyerson, just started her own business, called Simply Healthy Living. She is a Certified Nutrition Counselor, and knows her stuff when it comes to living healthy. Roasted Cauliflower Soup with Cheddar and Thyme

I recently joined a community run by my culinary/life hero, Ree Drummond (aka the Pioneer Woman, called Tasty Kitchen. In the realm of obvious website names (alongside totalnoms.com, of course), this one definitely lives up to expectations. Members can share, rate, and connect over recipes that come from all over the world- it’s a great place to get inspired when you aren’t sure what to make for dinner next.

I found myself in such a conundrum earlier this week, as I was pondering over what to order off FreshDirect again. Featured on the front page of Tasty Kitchen was a blog post about this beautiful looking soup, served in my favorite… square bowls!

I like this soup because not only is it vegetarian (if you use vegetable broth), but its hearty- the garlic and thyme come in with really robust flavors, and the cheddar adds a lovely creaminess that makes this a meal that really is comforting after a long day in the middle of winter. [Read more…]

Chili with Chicken and Chipotles

On a  shopping binge trip to Woodbury Commons up in New York State this New Year’s Day, we stopped by the Crate & Barrel outlet (aka heaven) to see what kinds post-holiday deals we could get. Before leaving to lug home a super-sweet stepstool, a house-is-now-a-home kind of candelabra, and some awesome square bowls (seen here and in the picture above), I browsed through some of the cookbooks and found one that really caught my eye: Sunday Soup by Betty Rosbottom.

If you know me at all, you know I love soup, most often the chicken-broth-with-noodles kind. But I received a gorgeous candy-apple red Martha Stewart cast-iron enameled casserole dish for Christmas this year and wanted to find some ideas for more hearty, substantial soups I could try. [Read more…]
