There’s nothing better than enjoying a home-cooked meal, made with care and love, surrounded by family and friends. A nicely set table, maybe some candles, and some mood music…
…But sometimes, you have this thing called “life” that just gets in the way, and you end up with a slim 30 minute timeframe from when you finally make it home from work to when you’ll collapse and pass out from exhaustion. For those times, there’s this recipe.
I recently found this while browsing through Gwyneth Paltrow’s ridiculously self-indulgent blog-thing, GOOP, and landing upon a “Clean Eats” menu that actually had some decent-sounding recipes in there (including this one).
This is a great hummus that couldn’t get any easier to make- as long as you have a mini-chopper or blender, you’re in business! Pair it with celery, pita bread, carrots, or whatever you find to be dip-able!
Makes about 2 cups
- 1 can garbanzo beans (chickpeas), rinsed and drained
- 2 cloves garlic, peeled
- Juice of 1 lemon
- 3 tablespoons tahini
- 1 teaspoon sea salt
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 tablespoon extra virgin olive oil
1) Blend all ingredients in a mini-chopper until smooth.
2) Serve and enjoy 🙂
